Leeks quiche

- 800 g Leeks
- 150 + 10 g Butter
- 20 cl Heavy cream
- 3Eggs
- 200 g Flour
- Salt
- Pepper

Preparation steps
- In a bowl, put the flour, add 100 g of butter in small pieces, work with your fingertips. Make a hollow in the center, add 1 pinch of salt and 5 cl of water. Mix then shape a ball of dough. Flour it and let it sit for 30 min.
- Clean the leeks, thinly slice them and then cook them gently for 10 min in 50 g of butter without leaving to color. Salt and pepper.
- In a bowl, beat the eggs into an omelet, add the cream, salt, pepper and then the slightly cooled leek fondue.
- Preheat the oven th. 7 (210 °). Butter a pie pan and garnish with dough. Pour the preparation into the leeks and bake for 30 min. Serve hot with a green salad.
