Delicious Charlotte, the famous French dessert!

Recipe ingredients

  • 300 gr. Savoyard cookies
  • 200 gr. milk, fresh
  • 100 gr. rum
  • A little sunflower oil for the spread

For the cream

  • 5 egg yolks
  • 150 gr. sugar
  • 300 gr. strawberries
  • 400 gr. cream cheese (mascarpone)
  • 3 egg whites

For caramel and garnish

  • 100 gr. sugar
  • 4 tbsp. water
  • Strawberries, whole

Recipe execution

First, mix the rum and milk in a bowl.

We lay a form for charlotte, with non-stick paper.

Then dip the savoys in the milk mixture and place them upright, on the side walls of the form, next to each other.

For the cream, beat the egg yolks with the sugar until fluffy.

Add the cheese to the mixture, while continuing to beat, and then the strawberries.

Beat the egg whites into a tight meringue and incorporate them into the previous mixture, with gentle movements.

Then, pour the cream into the form and leave it in the fridge for 5 hours.

When we are going to serve it, we demould it carefully.

To make the caramel, pour the sugar into a saucepan with a heavy bottom and add the water.

Stir over medium heat until the mixture turns caramel.

Remove the caramel threads with a fork and spread them on non-stick paper smeared with a little sunflower oil.

Once hardened, remove the paper and garnish with it the charlotte.

Finally, we complete the decoration by putting strawberries on top of the charlotte.
