Preparation steps
- Peel the leeks, rinse them under cool water then chop them. Heat the butter in a frying pan and cook the leeks for 15 min, mixing often.
- Meanwhile, cook the hake filet for 5 min in steam. Cut it in cubes and incorporate them in the frying pan, with the leeks. Salt, pepper, add the crumbled thyme and mix.
- Place each salmon cutlet on a board and flatten them slightly. Salt, pepper and garnish with the contents of the pan. Fold the cutlets to form lids and keep them closed with kitchen string.
- Preheat the oven to 165 ° C (th.6). Heat the oil in the frying pan and brown the paupiettes on all sides. Place them in a baking dish. Put in the oven and cook 8 to 10 min. Serve right out of the oven.
